Kitchen Extraction systems become coated in combustible materials such as fats, grease and grime that are given off during the cooking process.

If these are not regularly removed through cleaning, then the risk of a fire increases as the dirt builds up and your insurance company will require you to show that you are managing this risk and that the extract system is cleaned by a BESCA qualified company.

The frequency with which you should have your kitchen extract system cleaned depends on how heavily it is used. There are BESA TR19 Standard best practice guidelines (see below). In practice, the AIB (Association of British Insurers) recommends that, depending on the usage load, an extract system in a commercial kitchen should be cleaned and certified anything from quarterly to annually.

Frequency of Cleaning Guidelines.
Heavy Use 12 – 16 hours per day – 3 monthly
Medium Use 6 – 12 hours per day – 6 monthly
Light Use 2 – 6 hours per day – 12 monthly

If unattended to, the consequences can be severe for not only the commercial operation but the individual responsible.

All employers have a legal obligation to meet Health and Safety regulations and abide by the British Standard DW/172, which is defined by BESCA TR19 standard.

All systems require cleaning yearly, request an inspection immediately to ensure you are compliant. You should have a BESCA Certificate with a logged number to ensure you comply.

The Canopy is wrapped to enable the industry approved foam treatment. Hoodpro use advanced technology equipment including a patented foam box and spinners to ensure the entire system is thoroughly cleaned. All areas are checked and where necessary, including the fan, additional hand scraping and cleaning may take place. In some cases where solidified grease has built up; grinding may be required.

It is common for owners and kitchen staff to state they clean the kitchen canopies and filters, but this is only a small part of the extraction system, they don’t have the knowledge or equipment to clean inside ducting or access to fans. That’s why is critical you use qualified technicians. Additionally, you can’t provide your own certificate for insurance purposes if required during a claim.  We provide photographic proof within the BESCA report

Similar answer to question 9, it can take as little as two hours for small system to a full day for large systems and prices to suit.  Schools and care homes tend to be at the bottom of the price scale with large restaurants or busy takeaways open seven days a week more towards the top of the scale.
